Wild Pattersbier

Belgian monks are known for brewing strong ales, which have for centuries been sold to finance their monasteries. The style Pattersbier (literally father's beer) is less well known. It's what the monks brewed for their own daily consumption. This Pattersbier is brewed using traditional Belgian ingredients and techniques but is fermented with a wild yeast isolated from an apple in a Canadian orchard.

Wild Belgian Specialty Ale

Belgian brewers have a tradition of making special ales for their local customers. These beers use distinctive local yeasts and don’t fit any formal style category. They are collectively known as Belgian Specialty Ales. Our version uses traditional Belgian amber candi syrup made from sugar beets, a wild Canadian yeast isolated from an apple, and classic Belgian malt. It’s re-fermented in the bottle to give it that classic Belgian effervescence.
